Ingredients
- 2 packages of Harvest Fresh Zucchini Spirals
- 4 Gourmet Garlic cloves, minced divided
- 1 Harvest Fresh Shallot, minced
- 1 lb Shrimp, peeled & deveined
- 4 tbsp unsalted butter, divided
- 2 tbsp fresh parsley, chopped
- 2 tsp of Lemon zest
- Salt and black pepper
Directions
- Melt 1 tablespoon of butter in a large skillet on medium-high.
- Add garlic cloves (minced) and cook, stirring frequently for a minute.
- Place the zucchini spirals in a skillet and saute until the texture is just past al dente.
- Season with salt & pepper, to taste.
- Place the cooked zucchini spirals to the side & keep warm.
- Melt 3 tablespoons of butter in skillet. Add the 2 remaining garlic cloves (minced) & shallot. Stir frequently, approximately 2 minutes.
- Add shrimp and salt & pepper to taste.
- Saute until the shrimps are cooked thoroughly (a nice orange colour), approximately 4 minutes.
- Now add in the lemon zest and parsley.
- Simply prepare & serve with zucchini spirals.
