Ingredients

  • 2 Packages Harvest Fresh Zucchini Spirals
  • 1 Lb. Ground meat of preference
  • 1 Large Egg, beaten
  • ½ Cup Breadcrumbs
  • ½ Cup Mozzarella Cheese, shredded
  • ¼ Cup Parmesan Cheese
  • 1 Onion, finely Chopped
  • 2 Garlic Cloves, finely chopped
  • ¼ Cup Parsley, fresh finely chopped
  • 1 Jar, Tomato sauce, basil
  • Salt to taste
  • 2 Tbsp. Olive Oil
  • Basil for garnish

What You Need

Directions

  1. For Meatballs: In a large bowl, add ground meat, egg, breadcrumbs, mozzarella cheese, parmesan cheese, garlic, onion, 1 cup Zucchini Spirals chopped, parsley, and salt. Mix well.
  2. Form meat mixture into round meatballs and repeat process for each.
  3. In a pot, add tomato sauce, bring to a boil, then reduce heat, add meatballs cook on low heat for 50 minutes, until cooked.
  4. In a skillet, add olive oil, Zucchini Spirals, salt and pepper and sauté for 3 minutes, until cooked.
  5. On a plate, add sautéed Zucchini Spirals, top with tomato sauce from meat balls, parmesan cheese and basil, serve with Zucchini Meat balls and ready to serve.
