Ingredients
- 1 Package Harvest Fresh Zucchini Spirals
- ½ Bag Harvest Fresh SpinachÂ
- 3 Harvest Fresh Cipolline Onions, finely chopped
- ½ Cup Carrots, shredded
- 2 Garlic Cloves, finely chopped
- 2 Tbsp. Olive Oil
- 3 Tbsp. Sundried Tomato Olive Pesto, (sunflower kitchen)
- ¼ Cup Cherry tomatoes, sliced halves.
Directions
- In a frying pan, on medium to high heat, add oil, onions, cook until the onions are translucent, add garlic, sauté until fragrant.,
- Add Spinach, shredded carrots, cook until spinach is wilted and carrots, softened.
- Add Zucchini Spirals, cook for additional 5 minutes, add Sundried tomato olive pesto, mix well.
- Place on a large plate, add cherry tomatoes and ready to serve.
