Ingredients
- 1 pkg of Harvest Fresh Zucchini Spirals
- ½ English Cucumber
- 1/2 cup of Feta Cheese
- 6 Basil leaves (rolled and sliced)
- For the Simple Vinaigrette Dressing:
- 3 Tbsp cup Extra virgin olive oil
- 3 Tbsp White wine vinegar
- 2 medium cloves of Garlic, pressed or minced
- 1/4 tsp fine Sea salt (to taste)
- Freshly ground black pepper
Directions
- Sweat Zucchini spirals in colander, sprinkle with salt and let stand for 5-10 minutes for spirals to sweat out the extra water. Pat the Zucchini dry with a paper towel.
- Thinly slice the cucumber and break up the feta cheese in small pieces.
- Add Zucchini spirals, cucumber, feta cheese, basil, dressing in to a dish and toss.
Salt and pepper to taste.
