  1. In a skillet, heat butter, add garlic, shallots, veggie medley, sauté for 5 minutes, add egg whites, paprika, salt and pepper using spatula, scramble the eggs and mix all together, until cooked.
  2. Add cheese and cook until cheese is melted.
