Ingredients
- 2 Packages Harvest Fresh Cubed Sweet Potato
- 1 Egg, whisked
- ½ Cup green onions, sliced
- ½ Cup Breadcrumbs
- 2 Tbsp. Sour Cream
- 4 Cheese Strings, sliced in half
- 1 Tsp. Oregano
- Salt and pepper to taste
Sautéed Garlic Kale
- 1 Bag Harvest Fresh Chopped Kale
- 4 Garlic Cloves, finely chopped
- 2 Tbsp. Olive Oil
- Salt and Pepper to taste
Directions
- In a large pot, add cold water and salt, add cubed sweet potato and boil, until sweet potatoes are soft, drain and, let cool.
- Place Sweet potatoes in a large bowl, using a fork, mash sweet potatoes, then add all ingredients, except mozzarella cheese strings, mix until all combined.
- Once mixed, form into an oval shape and place ½ mozzarella cheese string in the centre and cover the cheese. Repeat for each. Then, lightly spray the top with cooking spray.
- Place in Air fryer at 375 degrees for 10 minutes, and flip for an additional 5 minutes, until cooked and golden brown. Let cool.
- In a large skillet, add oil, garlic and chopped Kale and sauté, until wilted.
- Add Sautéed Kale on a plate, place cheese filled sweet potato footballs on top. Then ready to serve.
*These can be pan fried for 3 minutes on each side until golden brown.
