Ingredients

Sautéed Garlic Kale

Directions

  1. In a large pot, add cold water and salt, add cubed sweet potato and boil, until sweet potatoes are soft, drain and, let cool.
  2. Place Sweet potatoes in a large bowl, using a fork, mash sweet potatoes, then add all ingredients, except mozzarella cheese strings, mix until all combined.
  3. Once mixed, form into an oval shape and place ½ mozzarella cheese string in the centre and cover the cheese. Repeat for each. Then, lightly spray the top with cooking spray.
  4. Place in Air fryer at 375 degrees for 10 minutes, and flip for an additional 5 minutes, until cooked and golden brown. Let cool.
  5. In a large skillet, add oil, garlic and chopped Kale and sauté, until wilted.
  6. Add Sautéed Kale on a plate, place cheese filled sweet potato footballs on top. Then ready to serve.

*These can be pan fried for 3 minutes on each side until golden brown.


