Ingredients
- 1 Package Harvest Fresh Chopped Kale
- 1 Large Tortilla Wrap
- ½ Pint Grape Tomatoes, halved
- ½ Red Onion, sliced
- ½ Yellow and Red Pepper, sliced
- 2 Garlic Cloves, minced
- 3 Eggs, Beaten
- 1 Cup Mixed Cheddar, Mozzarella, shredded
- 2 Tbsp. Butter, salted
- 1 Tsp. Salt
- 1 Tbsp. Olive Oil
Directions
- Preheat oven at 375 degrees.
- In a large bowl, massage chopped kale with olive oil and salt.
- In a frying pan, on medium heat, add butter, once melted add onions sauté until translucent, add garlic sauté until fragrant, add peppers, sauté for 3 minutes, and add Chopped Kale, sauté until wilted and cooked. Set aside.
- In a baking dish, add Tortilla wrap, layer bottom with shredded cheese, add tomatoes, sauteed vegetables, eggs, and top with remaining shredded cheese.
- Place in oven for 25 minutes. Remove from heat, slice and ready to serve.
