Ingredients
- 1 Package Harvest Fresh Spinach
- ¼ Cup Vegetable Oil
- 1 Tsp. Salt
- 2 ½ Cups. Flour, all purpose
- 1 Tsp. Baking Powder
- ¾ Cup. Cold water
Directions
- In a large pan, on medium heat add Spinach, cook until all the moisture is then reduced, then place under cold water and drain.
- In a blender, add sautéed spinach, salt, oil, and water. Blend well.
- In a large bowl, add flour and baking powder, mix well. Then add Spinach puree. Mix with your hands, until it forms the dough, and shaped in a ball. Set aside for 20 minutes in a tea towel, to rise.
- Cut the dough into 6 equal portions, place some flour on the working surface, and rolling pin. Using the rolling pin, roll dough into 8-inch rounds.
- Heat a non-stick skillet, on medium heat, place spinach tortilla, cook until brown spots form. Flip and cook the other side. Repeat for each and, place tortillas in a tea towel to keep moist.
- For each tortilla, make a slight cut from the the centre, and add your favourite toppings in each section, fold tortilla up, over, and down. Then ready to serve.
