Ingredients
- ½ Package Harvest Fresh Chopped Kale
- 475g Ricotta, drained
- 1 Large Egg, beaten
- 1 Jar Tomato Sauce, Cooked
- ¾ Cup Breadcrumbs, Italian seasoned
- ½ Onion, finely chopped
- 4 Garlic Cloves, finely chopped
- 1/3 Cup Parmesan Cheese
- 1 Tbsp. Olive Oil
- Salt and Pepper to Taste
- Chili flakes, pinch
Directions
- In a large skillet, add oil, 2 garlics and chopped Kale (stems removed) and sauté, until wilted, add salt and pepper, mix well, place in a dish and cool in the refrigerator for 15 minutes.
- Once Kale has cooled place in a cheese cloth, to remove excess water.
- In a large bowl, add Ricotta, Kale, onions, 2 garlics, egg, breadcrumbs, and parmesan cheese and chili flakes. Mix with your hands, until fully combined.
- Form kale ricotta mixture into a round shape, to size preferred.
- In a large pot, add sauce and Kale Ricotta Bites and cook on low for 40 minutes, stirring occasionally.
- Remove from heat and ready to serve as a side with your favourite pasta.
