Ingredients
- 1 Package Harvest Fresh Kale Super Blend
- 1 Package Harvest Fresh Cubed Sweet Potato
- 1 Red Onion, Sliced
- 3 Garlic Cloves, finely chopped
- 1 Tbsp. Avocado Oil
- 2 Tbsp. Olive Oil
- Salt and Pepper to taste
- Avocado, Slices, as a side
- Eggs, cooked as desired
Directions
- Preheat oven at 375 degrees.
- In a large bowl, add cubed sweet potatoes, salt, black pepper, and 2 Tbsp. Olive oil, mix well.
- In oven tray, add cubed sweet potatoes and spread evenly on the pan.
- Place in oven, bake for 30 minutes, until cooked, set aside.
- In a large skillet, add oil over medium to high heat. Add onions, cook until translucent, add garlic, cook for a minute, then add cubed sweet potatoes and Kale Super blend, cook for a few minutes, until wilted.
- Remove from heat, add salt and pepper.
- Place on a dish, add avocado and eggs and ready to serve.
