Ingredients
- 1 Package Harvest Fresh Zucchini Veggie Sheets
- ½ Cantaloupe, sliced in half, seeds removed
- 1 Cup Cherry Tomatoes, sliced halved
- 8 Slices Prosciutto, rolled
- 1 Cup Ricotta, crumbled
- 2 Tbsp. Balsamic Vinegar Glaze
Directions
- Remove Zucchini Veggie sheets from package, salt each sheet and leave for 10 minutes pat dry with paper towel to reduce moisture.
- Using a melon baller, scoop cantaloupe to form melon ball.
- On a large plate, arrange Zucchini Veggie Sheets into ribbons, add melon balls, Prosciutto, cherry tomatoes and ricotta.
- Drizzle balsamic vinegar glaze on top of entire salad and ready to serve.
