Ingredients
- 2 Raw Harvest Jalapenos, finely diced
- 1 Cup Yellow cornmeal
- ¼ Cup Shredded Cheese
- ½ Cup Flour, all purpose
- 2 Tsp. Baking Powder
- ¼ Cup Sugar
- ½ Cup Milk
- ¼ Cup Butter, unsalted and melted
- 2 Tbsp Honey
- 1 Large Egg
- ½ Tsp. Salt
For Glaze
- ¼ Cup Butter, unsalted and melted
- 2 Tbsp. Honey
Directions
- For Jalapeno Poppers-Dry Ingredients: In a bowl, add cornmeal, flour, sugar, baking powder and salt, mix until combined.
- Wet ingredients: In a bowl, add milk, melted butter, honey and egg, whisk until creamy and smooth.
- Mix Step 3 into Step 2. Fold in Jalapenos and shredded cheese. Spoon batter in a greased muffin tin filling each cavity ¾ full.
- Place in oven at 375 degrees and bake for 12-15 minutes, until toothpick comes out clean.
- For Glaze: Whisk melted butter and honey. Brush each warm popper with glaze. Top with Jalapeno Popper chips and ready to serve.
