Ingredients

  • Cream Cheese Carrot Filling:
    1. 1 Package Harvest Fresh Nantes Carrots,
    2. 1 Package Cream Cheese
    3. 1 Cup Whipping cream
    4. 1/4 cup natural brown sugar
    5. 2 Tbsp. Vanilla Extract
    6. 2 Tsp. Cinnamon

    Graham Crumb Carrot base

    1. 1 cup of Graham crumbs
    2. 1/4 cup Unsalted butter, melted
    3. Nantes Carrots, shredded

    Topping

    1. Whipped cream
    2. Graham crumbs, sprinkles
    3. Carrot shreds

Directions

  1. For Graham crumb carrot base: Combine all ingredients in a bowl, mix and place in cup.
  2. In a blender place chopped Nantes Carrots and purée.
  3. Cream Cheese Filling:  In a bowl, add Cream cheese, whipping cream, carrot purée, brown sugar, vanilla extract and cinnamon and blend well.
  4. Chill in the refrigerator for 2 hours.
  5. Top with whipped cream for topping and sprinkle graham crumbs on top with shredded carrots.
