Ingredients
- Cream Cheese Carrot Filling:
- 1 Package Harvest Fresh Nantes Carrots,
- 1 Package Cream Cheese
- 1 Cup Whipping cream
- 1/4 cup natural brown sugar
- 2 Tbsp. Vanilla Extract
- 2 Tsp. Cinnamon
Graham Crumb Carrot base
- 1 cup of Graham crumbs
- 1/4 cup Unsalted butter, melted
- Nantes Carrots, shredded
Topping
- Whipped cream
- Graham crumbs, sprinkles
- Carrot shreds
Directions
- For Graham crumb carrot base: Combine all ingredients in a bowl, mix and place in cup.
- In a blender place chopped Nantes Carrots and purée.
- Cream Cheese Filling: In a bowl, add Cream cheese, whipping cream, carrot purée, brown sugar, vanilla extract and cinnamon and blend well.
- Chill in the refrigerator for 2 hours.
- Top with whipped cream for topping and sprinkle graham crumbs on top with shredded carrots.
