Ingredients

  • 1 Package Harvest Fresh Cubed Butternut Squash, mashed
  • 4 slices of thick bread, brioche
  • 2 Large Eggs
  • 1 Cup Milk
  • 1 Tsp. Vanilla Extract
  • 1 Tsp. Cinnamon, ground
  • 1 Tsp. Nutmeg, ground
  • 1/4 Tsp. Ginger
  • 2 Tbsp. Brown Sugar
  • 1/4 Tsp. Salt
  • 4 Tbsp. Butter, divided
  • Maple Syrup, for serving
  • Powdered Sugar, for garnish
  • Strawberries, for topping
  • Dollop of cream cheese, spreadable, topping

Directions

  1. In a pot of boiling water, add cubed butternut squash, cook until tender.
  2. In a bowl add cooked cubed butternut squash and mash, then add eggs and milk, whisk until smooth. Then, add vanilla extract, cinnamon, nutmeg, ginger, brown sugar, whisk until fully combined. Let batter sit aside for a few minutes.
  3. Once batter is ready, dip each slice of bread into butternut squash batter, until fully coated on each side, and soaked in the batter.
  4. In a skillet over medium heat, add butter, once melted, add Butternut Squash French toast, cook for 3 minutes per side, until golden brown. Repeat for each, adding more butter as required.
  5. For assembly: Add 2 slices on a plate, drizzle with maple syrup, powdered sugar, and sliced strawberries and ready to serve.

* Great to spread Strawberry cream cheese, or cream cheese of preference on top.


