Ingredients
- 1 Package Harvest Fresh Butternut Squash Soup Meal Kit
- 2 Tbsp. Olive Oil
- 4 Cups Water
- Salt and Pepper to Taste
- Optional: Basil, garnish
Directions
- Rough chop garlic, Cipolline onions and sweet peppers.
- In a pot, on medium heat, add 2 Tbsp. Olive oil.
- Add onions and sweet peppers, cook until onions are translucent, add garlic, Butternut Squash and Sweet Potato.
- Cook for 10 minutes, constantly stirring, until vegetable have softened.
- Add 4 cups of water, mix well and place lid on top.
- Cook for 15 minutes on medium to high heat, until vegetables have completely softened and ready to blend. Remove from heat.
- Using a hand immersion blender, blend until completely smooth and soup mixture has thickened. Be careful of splattering while blending, as soup is hot.
- Once soup is well blended and smooth, add soup seasoning, salt and pepper to taste, mix well.
- Garnish with Basil and ready to serve.
