Ingredients
- 1 Package Harvest Fresh Butternut Squash Spirals
- 1 Cup. Harvest Fresh Chopped Kale
- 2 Harvest Fresh Shallots, finely sliced
- 1 Can Chickpeas, drained and rinsed
- 4 Tbsp. Olive Oil
- Salt and Pepper to taste
Dressing
- 2 Garlic Cloves, chopped
- 2 Tbsp. Walnuts
- 2 Tbsp. Lemon, juiced
- 1 Tbsp. Basil
- 1 Tbsp. Parsley
Directions
- In a frying pan on medium heat, add oil, onions and garlic, sauté for 2 minutes. Add Kale cook for 5 minutes, then add chickpeas and Butternut Squash Spirals, cook for 3 minutes.
- For the dressing: In a food processor, add all dressing ingredients and blend well.
- Place Butternut Squash Spiral Salad in a plate, add dressing and ready to serve.
