Ingredients
- 1 ½ Cup Harvest Fresh Nantes Carrots, Shredded
- 1 Cup Flour, all purpose
- ¼ Tsp Baking Powder
- ½ Cup Butter, unsalted, melted
- ¼ Tsp. Salt
- 1 Tsp. Cinnamon
- ¼ Tsp Nutmeg
- 1 Large egg
- 1 Cup Brown Sugar
- 1 Tbsp Vanilla Extract
- ¼ Chopped Pecans
Cream Cheese Swirl
- ½ Block Cream Cheese, room temp
- ¼ Cup Sugar, granulated
- 1 large Egg yolk
- ¾ Tsp. Vanilla Extract
Graham Cracker Topping
- ¾ Cup Graham Cracker Crumbs, topping
- 1 Tsp. Cinnamon
- ¼ Cup Butter
Directions
- Pre-heat oven at 350 degrees. Lightly spray 8 x 8 baking pan with cooking spray. Line the pan with parchment paper.
- In a Large bowl, add melted butter and brown sugar, mix until combined. Stir in egg and vanilla extract.
- Add flour, baking powder, cinnamon, nutmeg and salt, mix well until fully combined. Fold in Nantes Carrots and pecans and set aside.
- For Cream Cheese filling: Place all the ingredients in a bowl, mix with a blender until creamy and smooth.
- Pour half of Carrot cake batter into the pan. Using a spatula, spread it evenly. Then take half of cream cheese filling and drop spoons on to the carrot batter, add remaining carrot batter around cream cheese filling. Then finish with remaining cream cheese filling.
- Take a knife and swirl around until the cream cheese and carrot batter, until mixed. Bake for 35 minutes, until the edges are golden brown, and clean in the centre. Let cool and ready to serve.
