Ingredients

  • 1 Package Harvest Fresh Riced Cauliflower
  • 1 Raw Harvest Jalapeno, finely chopped
  • 3 Cobs Peaches and Cream
  • 1 Tbsp Chili Lime Seasoning
  • 1 Lime, juice, zest
  • 2 Garlic cloves, minced
  • ½ Cup Crème Fraiche
  • 3 Tbsp. Cilantro, finely chopped
  • 1 Cup Grape Tomatoes, sliced halves
  • 2 Green Onions, finely chopped
  • ½ Cup Cotija Cheese, grated
  • 1 Tbsp. Butter
  • Salt and Pepper to taste

Directions

  1. In a bowl add grape tomatoes, drizzle with oil, sprinkle with salt and pepper.
  2. Prepare indoor grill. Heat to 400 to 450 degrees and char corn on all sides. Once charred, remove from grill and cut kernels from cobs. Set aside.
  3. In a skillet, on medium to high heat, add butter, once melted add charred corn, chili lime seasoning, lime zest, jalapeno, garlic. Mix until combined. Add crème fraiche, lime juice, cilantro, mix until combined, add riced cauliflower, sauté, until tender. Remove from heat.
  4. In a large plate, add cauliflower corn mixture, cotija cheese, cherry tomatoes and green onions and ready to serve.

