Ingredients

  • 1 Cup Cottage Cheese
  • 3 Eggs, large
  • 1 Cup Almond Flour
  • ¼ Tsp. Baking Powder
  • 1 Tsp. Italian Seasoning
  • ¼ Tsp. Garlic Powder
  • ½ Tsp. Salt

Toppings

  • 1 Bag Harvest Fresh Spinach
  • 1 Cup Mozzarella and Cheddar Cheese, Shredded
  • 1 Red Bell Pepper, de-seeded, sliced
  • 1 Tbsp. Garlic, minced
  • 1 Tbsp. Olive Oil
  • 1 Tsp. Salt

Directions

  1. Pre-heat oven at 400 degrees and line a baking sheet with parchment paper.
  2. In a skillet, add Olive Oil, add garlic sauté, until fragrant, add peppers, sauté until softened, add spinach, sauté until wilted, add salt. Mix well and set aside and let cool.
  3. In a large bowl, add cottage cheese, eggs, almond flour, salt, Italian seasoning, garlic powder and baking powder, mix until completely combined.
  4. Pour the batter on baking sheet and spread evenly forming a circle.
  5. Bake for 20 minutes until crust is golden brown and firm.
  6. Top with shredded mozzarella cheese, sauteed spinach mixture, add back in oven for 5 minutes until cheese is melted. Remove from heat and garnish with Parmesan Cheese.

