Ingredients
- 1 Package Harvest Fresh Riced Cauliflower
- 1 Bag Harvest Fresh Spinach
- 6 Eggs
- ½ Onion, finely chopped
- 3 Tbsp. Garlic, minced.
- ¼ Cup Parmesan Cheese
- 2 Sheets Butter Puff Pastry
- 1 ¼ Cup Mozzarella
- 2 Tbsp. Olive Oil
- 1 Tsp Salt, divided
- ¼ Tsp. Pepper
- Egg Wash
Directions
- Pre-heat oven at 375 degrees.
- In a Large Skillet on medium heat, add oil, onions, sauté until translucent, add garlic, sauté until fragrant, add cauliflower rice, and ¼ Tsp Salt. Add spinach, sauté until wilted and liquid is evaporated. Remove from heat and let cool.
- In a bowl, add eggs, parmesan cheese, salt, and pepper, whisk until combined, and set aside.
- For assembly, in a deep baking dish add 1 Puff Pastry Sheet, ensure to cover the sides, add cauliflower spinach mixture, egg mixture, mozzarella cheese, and add 1 Puff Pastry Sheet diagonally on top, until fully covered, fold over all edges and put a small slit in centre, allowing steam to escape. Brush Egg wash on top.
- Bake for 25 minutes, bake until golden brown. Remove from heat and ready to serve.
