Ingredients

  • 1 Package Harvest Fresh Riced Cauliflower
  • 6 Eggs, separated
  • 1 ¼ Cup Almond Flour
  • 1 Tbsp. Baking powder
  • 6 Tbsp. Butter, melted
  • 6 Garlic Cloves, minced
  • 1/3 Cup Fresh Parsley, finely chopped
  • ½ Cup Mozzarella and Cheddar, shredded
  • 1 Tsp. Oregano
  • 1 Tsp. Salt

Directions

  1. Preheat oven to 350 degrees. Lightly spray a mini loaf baking pan.
  2. In a large bowl, add Riced Cauliflower and microwave for 6 minutes, remove and let cool.
  3. Using a clean dishtowel, drain cauliflower rice, and squeeze out as much water as possible.
  4. In a large bowl, whisk together almond flour, baking powder and salt.
  5. Add egg yolks, melted butter, garlic, oregano, shredded cheese and about ¼ cup egg whites, and beat well, using hand blender, then stir in steamed cauliflower.
  6. Add remaining egg whites and blend until fully combined and add fresh parsley stirring it in the mixture.
  7. Add cauliflower mixture into baking pan and spread evenly.
  8. Bake for 25 minutes, until a toothpick is inserted in the cauliflower garlic bread and comes out clean and golden brown. Let cool and remove from pan and ready to serve.

