Ingredients
- 1 Pack Harvest Fresh Cauliflower riced
- 1 Lb. Ground Turkey
- 4 Bell Peppers, any colour
- 1 Onion, chopped
- 2 Garlic cloves, chopped
- 1 cup Parmesan cheese
- ¾ Basil leaves, chopped
- 1/2 cup Mozzarella, shredded
- 1 Tbsp. Olive oil
- Salt and Pepper to taste
- Tomato Sauce, optional
Directions
- Preheat oven at 350 degrees.
- In a skillet on medium heat, add garlic and onion cook for 2 min, add ground turkey cook until browned.
- Add cauliflower rice and olive oil, cook for 2 min. *Do not over cook the cauliflower rice.
- Add parmesan cheese and basil leaves. Place on low heat to prepare peppers.
- Cut tops off the peppers and remove the seeds inside.
- Stuff the Peppers with Cauliflower riced filling.
- Bake for approx. 40 minutes, until the pepper is soft. Add sauce (optional), mozzarella cheese on each pepper and bake in oven for 10 more minutes.
