Ingredients

  • 1 Pack Harvest Fresh Cauliflower riced
  • 1 Lb. Ground Turkey
  • 4 Bell Peppers, any colour
  • 1 Onion, chopped
  • 2 Garlic cloves, chopped
  • 1 cup Parmesan cheese
  • ¾ Basil leaves, chopped
  • 1/2 cup Mozzarella, shredded
  • 1 Tbsp. Olive oil
  • Salt and Pepper to taste
  • Tomato Sauce, optional

Directions

  1. Preheat oven at 350 degrees.
  2. In a skillet on medium heat, add garlic and onion cook for 2 min, add ground turkey cook until browned.
  3. Add cauliflower rice and olive oil, cook for 2 min. *Do not over cook the cauliflower rice.
  4. Add parmesan cheese and basil leaves. Place on low heat to prepare peppers.
  5. Cut tops off the peppers and remove the seeds inside.
  6. Stuff the Peppers with Cauliflower riced filling.
  7. Bake for approx. 40 minutes, until the pepper is soft. Add sauce (optional), mozzarella cheese on each pepper and bake in oven for 10 more minutes.
