Ingredients
- 1 Package Harvest Fresh Riced Cauliflower
- 1 Cup Mozzarella Cheese, shredded
- ¼ Cup Parmesan Cheese, grated
- 1 Large Egg, whisked
- 1 Tsp. Garlic powder
- ½ Tsp. Italian Season
- 1 Tbsp Garlic Butter
- ½ Tsp. Salt
- ¼ Tsp. Pepper
Filling
- 1 Cup Harvest Fresh Spinach
- ½ Cup Mozzarella, Cheddar Cheese, shredded
Directions
- Pre-heat oven 375 degrees F.
- In a saucepan, add an inch of water, cauliflower rice, with the lid, steam for 6-8 minutes, until softened; remove from heat and let cool.
- Using a clean dishtowel, drain cauliflower rice, and squeeze out as much water as possible.
- In a bowl, add steamed cauliflower rice, egg, shredded cheese, parmesan cheese, garlic powder, Italian seasoning, salt, and pepper. Mix until well combined.
- Divide cauliflower mixture into 4 portions and form into rectangles.
- Bake for 20 minutes, flip and bake for 5 minutes, until cooked. Remove from heat and set aside.
- In a skillet, heat butter, until melted, then place one cauliflower slice, add cheese and spinach on top, add other cauliflower half, flip until cheese is melted and spinach has wilted. Repeat for each. Remove from heat and ready to serve.
