Ingredients

Meatballs

  • 1b Ground Chicken
  • ½ Cup Ricotta Cheese
  • ¼ cup freshly grated Parmesan
  • 2 Garlic Cloves, minced
  • ½ Cup Breadcrumbs, seasoned
  • 1 Egg, beaten
  • ½ Tsp. Salt
  • ¼ Tsp. Pepper
  • Fresh Parsley, finely chopped, garnish

Alfredo Sauce

  • 2 Cups Harvest Fresh Spinach
  • 2 Tbsp. Butter
  • 1 Garlic Clove, finely chopped
  • 1 Cup Heavy Cream
  • ½ cup freshly grated Parmesan
  • Salt and Pepper to taste

Directions

  1. Pre-heat oven at 375 degrees F. On a baking sheet, lightly spray with cooking spray.
  2. In a bowl, mix meatball ingredients, until fully combined. Form into meatballs. Bake for 25 minutes, until cooked.
  3. In a skillet, melt butter, add garlic, sauté, until fragrant, add cream, add spinach, sauté, until wilted. Stir in Parmesan Cheese, until smooth and creamy, add salt and pepper to taste, mix well. Remove from heat.
  4. Toss Meatballs in Spinach Alfredo Sauce, sprinkle parmesan cheese and parsley on top and ready to serve.

