Ingredients

  • 1 Bag Harvest Fresh Chopped Kale
  • 3 Tbsp. Olive Oil
  • 6 Pc. Bacon, cooked
  • 1 Can Chickpeas, drained
  • 1/3 Cup Panko Breadcrumbs
  • 1 Tbsp. Garlic Seasoning
  • 1 Tbsp. Paprika Seasoning
  • 1/2 Cup Parmesan cheese, shredded and grated
  • Salt to Taste

Directions

  1. In a bowl add Chickpeas, 2 Tbsp. olive oil, salt, seasoning and panko breadcrumbs. Mix well.
  2. Place a piece of parchment paper on oven pan and place chickpeas mixture. Bake for 15 minutes at 350 F, until cooked.
  3. Prepare dressing, combining all ingredients in a small bowl, mix well.
  4. In a large bowl, massage chopped kale with a little salt and 1 Tbsp. olive oil.
  5. Add roasted chickpeas, bacon pieces, shredded parmesan cheese, dressing and top with grated parmesan ready to serve.

