Ingredients
- 1 Bag Harvest Fresh Chopped Kale
- 3 Tbsp. Olive Oil
- 6 Pc. Bacon, cooked
- 1 Can Chickpeas, drained
- 1/3 Cup Panko Breadcrumbs
- 1 Tbsp. Garlic Seasoning
- 1 Tbsp. Paprika Seasoning
- 1/2 Cup Parmesan cheese, shredded and grated
- Salt to Taste
Directions
- In a bowl add Chickpeas, 2 Tbsp. olive oil, salt, seasoning and panko breadcrumbs. Mix well.
- Place a piece of parchment paper on oven pan and place chickpeas mixture. Bake for 15 minutes at 350 F, until cooked.
- Prepare dressing, combining all ingredients in a small bowl, mix well.
- In a large bowl, massage chopped kale with a little salt and 1 Tbsp. olive oil.
- Add roasted chickpeas, bacon pieces, shredded parmesan cheese, dressing and top with grated parmesan ready to serve.
