  1. In a Large pot, on high heat, bring broth to a light boil, let simmer for 5 minutes.
  2. In a pan, on medium to high heat, add butter, once melted add Cipolline onions, cook until translucent and browned.
  3. Add Cipolline onions in broth, and simmer for 30 minutes.
  4. Preheat Oven on Broil.
  5. In each onion soup bowl, add ½ cup Scamorza cheese, onion soup, 1 slice of Ciabatta bread and top with 1 slice of provolone cheese.
  6. Place in oven, for 2 to 3 minutes, until cheese is melted and slightly browned. Then ready to serve.
