Place Chicken between 2 pieces of Saran Wrap, pound using flats side of meat mallet.
In a bowl, add lemon juice, olive oil, Dijon mustard, garlic, salt, and pepper. Mix until combined. Add chicken, toss until fully coated.
In a grill pan on medium heat, add 1 tbsp. olive oil, chicken, grill until cooked and marked. 6-8 minutes per side, depending on thickness of chicken.
In a frying pan, add butter, once melted add onions, cook until the onions are translucent, add garlic, sauté until fragrant.
Add Grilled Bell Peppers, Zucchini Spirals, and sprinkle with lemon zest, season with salt and pepper. Sauté for 4 minutes, until zucchini is wilted slightly. Add Grape tomatoes and parmesan cheese, sauté for 1 minute.
Place on a large plate, Zucchini Spiral mixture, grilled chicken, bocconcini cheese, top with basil and ready to serve.
