Ingredients
- 1 Package Harvest Fresh Zucchini Spirals
- ½ Pt. Grape Tomatoes, halved
- ½ Yellow and Red Bell Pepper, sliced and grilled
- 1 Onion, Sliced
- 2 Garlic Clove, minced
- ¼ Cup Parmesan cheese
- ½ Lemon zest
- 2 Tbsp. Butter, salted
- ½ Cup Bocconcini Cheese, sliced in half
- ¼ Cup Fresh Basil
- Salt and Pepper to Taste
Chicken
- 4 Chicken Breasts, butterflied
- 2 Tbsp. Lemon Juice
- 2 Tbsp. Dijon Mustard
- 2 Tbsp. Olive Oil, divided
- 1 Garlic Clove, minced
- 1 Tsp. Salt
- ¼ Tsp. Black Pepper
Directions
- Place Chicken between 2 pieces of Saran Wrap, pound using flats side of meat mallet.
- In a bowl, add lemon juice, olive oil, Dijon mustard, garlic, salt, and pepper. Mix until combined. Add chicken, toss until fully coated.
- In a grill pan on medium heat, add 1 tbsp. olive oil, chicken, grill until cooked and marked. 6-8 minutes per side, depending on thickness of chicken.
- In a frying pan, add butter, once melted add onions, cook until the onions are translucent, add garlic, sauté until fragrant.
- Add Grilled Bell Peppers, Zucchini Spirals, and sprinkle with lemon zest, season with salt and pepper. Sauté for 4 minutes, until zucchini is wilted slightly. Add Grape tomatoes and parmesan cheese, sauté for 1 minute.
- Place on a large plate, Zucchini Spiral mixture, grilled chicken, bocconcini cheese, top with basil and ready to serve.
