Pre-heat Grill on medium to high heat. Lightly spray with cooking spray.
Grill Zucchini Sheets 2 minutes per side with grill marks.
In a large bowl, add boiled eggs and break them up with a fork.
Add mayonnaise, onions, garlic powder, Dijon Mustard, salt and pepper. Mix well.
Lay grilled Zucchini sheets on a plate, fill with egg mixture and gently roll, starting with rounded end. Repeat for each, place on a serving platter and ready to serve.
