Ingredients

  • 1 Package Harvest Fresh Zucchini Veggie Sheets
  • 6 Large Eggs, boiled
  • ½ Cup Green Onions, chopped
  • ½ Cup Mayonnaise
  • ¼ Tsp Garlic Powder
  • 1 Tsp Dijon Mustard
  • Salt and Pepper to taste

What You Need

Directions

  1. Pre-heat Grill on medium to high heat. Lightly spray with cooking spray.
  2. Grill Zucchini Sheets 2 minutes per side with grill marks.
  3. In a large bowl, add boiled eggs and break them up with a fork.
  4. Add mayonnaise, onions, garlic powder, Dijon Mustard, salt and pepper. Mix well.
  5. Lay grilled Zucchini sheets on a plate, fill with egg mixture and gently roll, starting with rounded end. Repeat for each, place on a serving platter and ready to serve.
