Ingredients

  • 2 Raw Harvest Jalapenos, finely diced
  • 1 Cup Yellow cornmeal
  • ¼ Cup Shredded Cheese
  • ½ Cup Flour, all purpose
  • 2 Tsp. Baking Powder
  • ¼ Cup Sugar
  • ½ Cup Milk
  • ¼ Cup Butter, unsalted and melted
  • 2 Tbsp Honey
  • 1 Large Egg
  • ½ Tsp. Salt

For Glaze

  • ¼ Cup Butter, unsalted and melted
  • 2 Tbsp. Honey

Directions

  1. For Jalapeno Poppers-Dry Ingredients: In a bowl, add cornmeal, flour, sugar, baking powder and salt, mix until combined.
  2. Wet ingredients: In a bowl, add milk, melted butter, honey and egg, whisk until creamy and smooth.
  3. Mix Step 3 into Step 2. Fold in Jalapenos and shredded cheese. Spoon batter in a greased muffin tin filling each cavity ¾ full.
  4. Place in oven at 375 degrees and bake for 12-15 minutes, until toothpick comes out clean.
  5. For Glaze: Whisk melted butter and honey. Brush each warm popper with glaze. Top with Jalapeno Popper chips and ready to serve.

