Ingredients
- 8 cups Harvest Fresh Chopped Kale
- 1 Cup Harvest Fresh Cipolline Onions, Sliced
- 1 Red Pepper, sliced
- 2 Tbsp. Butter
- 1 Large Egg, beaten
- 1 Cup. Mozzarella, shredded
- 2 Cups. Crumbled Feta
- ½ Cup. Parmesan Cheese
- 1 Tbsp. Olive Oil
For Phyllo Pastry
- 1 Package Phyllo Pastry
- ½ Cup Butter, melted
Directions
- In a large bowl, massage chopped kale with olive oil.
- In a frying pan, on medium heat, add 2 Tbsp. butter, once melted add onions, red pepper, sauté for 3 minutes, and add Chopped Kale, sauté until cooked. Set aside.
- Using a Pizza Pan, laying 3 phyllo sheets, brush butter evenly on top. Add Kale mixture, and egg, mix until combined.
- Add mozzarella cheese, feta cheese and parmesan cheese on top, then layer with 3 additional sheets with butter and repeat until Phyllo is done.
- Bake for 400 degrees for 20 minutes, until cooked and golden brown.
