Ingredients
- ½ Package Harvest Fresh Chopped Kale
- 1 Onion, finely Chopped
- 1 Red Pepper, chopped
- 2 Tbsp. Butter
- 1 Cup raw cashews, soaked in water 4-8 hours
- ½ Cup Soy Milk
- 1 ½ Tbsp. Lemon Juice
- 1 Tbsp. Parmesan Cheese
- 2 Garlic Cloves
- Salt and Pepper to taste
- Crackers, for serving
Directions
- In a large bowl, massage chopped kale with a little olive oil and salt.
- In a frying pan, on medium heat, add butter, once melted add onions, red pepper, sauté for 3 minutes, and add Chopped Kale, sauté until cooked. Set aside.
- In a food processor, add cashews, milk, parmesan cheese, lemon juice, garlic, and salt. Scrape side as required. Blend until smooth. Then add Kale, Pepper mixture. Pulse until fully mixed.
- Place in a bowl, and ready to serve crackers.
