Ingredients

  • ½ Package Harvest Fresh Chopped Kale
  • 1 Onion, finely Chopped
  • 1 Red Pepper, chopped
  • 2 Tbsp. Butter
  • 1 Cup raw cashews, soaked in water 4-8 hours
  • ½ Cup Soy Milk
  • 1 ½ Tbsp. Lemon Juice
  • 1 Tbsp. Parmesan Cheese
  • 2 Garlic Cloves
  • Salt and Pepper to taste
  • Crackers, for serving

Directions

  1. In a large bowl, massage chopped kale with a little olive oil and salt.
  2. In a frying pan, on medium heat, add butter, once melted add onions, red pepper, sauté for 3 minutes, and add Chopped Kale, sauté until cooked. Set aside.
  3. In a food processor, add cashews, milk, parmesan cheese, lemon juice, garlic, and salt. Scrape side as required. Blend until smooth. Then add Kale, Pepper mixture. Pulse until fully mixed.
  4. Place in a bowl, and ready to serve crackers.
