Ingredients
- 1 Bag Harvest Fresh Chopped Kale
- ½ Cup Quinoa, cooked
- 1 Avocado, diced
- ½ Cup Pomegranates arils (seeds)
- ½ Cup Pecans
- ¼ Cup Goat Cheese, crumbled
Dressing
- ¼ Cup Balsamic Vinegar
- ¼ Cup Olive oil
- ¼ Cup Apple Cider Vinegar
- 3 Tbsp. Lemon Juice, freshly squeezed
- 1 Tbsp. Sugar
Directions
- Prepare dressing, combining all ingredients in a small bowl, mix well.
- In a large bowl, massage chopped kale with a little olive oil.
- Add cooked quinoa, avocado, pomegranates, pecans and goat cheese, dressing and ready to serve.
