Ingredients

  • 1 Bag Harvest Fresh Chopped Kale
  • ½ Cup Quinoa, cooked
  • 1 Avocado, diced
  • ½ Cup Pomegranates arils (seeds)
  • ½ Cup Pecans
  • ¼ Cup Goat Cheese, crumbled
Dressing
  • ¼ Cup Balsamic Vinegar
  • ¼ Cup Olive oil
  • ¼ Cup Apple Cider Vinegar
  • 3 Tbsp. Lemon Juice, freshly squeezed
  • 1 Tbsp. Sugar

What You Need

Directions

 

  1. Prepare dressing, combining all ingredients in a small bowl, mix well.
  2. In a large bowl, massage chopped kale with a little olive oil.
  3. Add cooked quinoa, avocado, pomegranates, pecans and goat cheese, dressing and ready to serve.
