Ingredients

  • ½ Package Harvest Fresh Chopped Kale
  • 475g Ricotta, drained
  • 1 Large Egg, beaten
  • 1 Jar Tomato Sauce, Cooked
  • ¾ Cup Breadcrumbs, Italian seasoned
  • ½ Onion, finely chopped
  • 4 Garlic Cloves, finely chopped
  • 1/3 Cup Parmesan Cheese
  • 1 Tbsp. Olive Oil
  • Salt and Pepper to Taste
  • Chili flakes, pinch

Directions

  1. In a large skillet, add oil, 2 garlics and chopped Kale (stems removed) and sauté, until wilted, add salt and pepper, mix well, place in a dish and cool in the refrigerator for 15 minutes.
  2. Once Kale has cooled place in a cheese cloth, to remove excess water.
  3. In a large bowl, add Ricotta, Kale, onions, 2 garlics, egg, breadcrumbs, and parmesan cheese and chili flakes. Mix with your hands, until fully combined.
  4. Form kale ricotta mixture into a round shape, to size preferred.
  5. In a large pot, add sauce and Kale Ricotta Bites and cook on low for 40 minutes, stirring occasionally.
  6. Remove from heat and ready to serve as a side with your favourite pasta.

