Ingredients

  • 1 Pack Harvest Fresh Kale Slaw
  • 1 Cup Dry Quinoa, cooked
  • 1 Ripe Mango, peeled, chopped
  • 1 Avocado, sliced
  • ½ Cup Green onions, sliced
  • 1 Can Black beans, drained and rinsed
  • 1 Red Bell Pepper
  • ¼ Cup of Cilantro, chopped
  • Salt and Pepper to taste
Dressing
  • 3 Tbsp. Olive oil
  • 3 Tbsp. Lime juice
  • ½ Tsp. Cumin
  • 2 Tsp. Honey
  • ¼ Tsp. Cayenne pepper
  • ¼ Tsp. Ginger

Directions

  1. In a bowl, place Kale slaw, cooked quinoa, black beans, mango, avocado, green onions, red pepper and cilantro.
  2. Prepare dressing, combining all ingredients in a small bowl, mix well.
  3. Pour dressing on top, mix well. Season with salt and pepper.
