Ingredients
- 1 Pack Harvest Fresh Kale Slaw
- 1 Cup Dry Quinoa, cooked
- 1 Ripe Mango, peeled, chopped
- 1 Avocado, sliced
- ½ Cup Green onions, sliced
- 1 Can Black beans, drained and rinsed
- 1 Red Bell Pepper
- ¼ Cup of Cilantro, chopped
- Salt and Pepper to taste
Dressing
- 3 Tbsp. Olive oil
- 3 Tbsp. Lime juice
- ½ Tsp. Cumin
- 2 Tsp. Honey
- ¼ Tsp. Cayenne pepper
- ¼ Tsp. Ginger
Directions
- In a bowl, place Kale slaw, cooked quinoa, black beans, mango, avocado, green onions, red pepper and cilantro.
- Prepare dressing, combining all ingredients in a small bowl, mix well.
- Pour dressing on top, mix well. Season with salt and pepper.
