Ingredients

  • 1 Package Harvest Fresh Riced Veggie Medley
  • 1 Package Harvest Fresh Kale Super Blend
  • 1 lb. Lean ground turkey
  • 1 tsp each garlic powder, cumin, paprika
  • 1/2 Onion, finely chopped
  • 1/2 Cup. Bell peppers (green & red), chopped
  • 3/4 Cup Water
  • 1/2 Cup Tomato sauce
  • 1/4 Cup Salsa
  • 1/2 Can Black Beans, drained
  • 1/4 Cup Black Olives
  • 1/4 Cup Mozzarella Cheese, shredded
  • 1/4 Cup Tortilla Strips
  • 2 tsp.Olive Oil
  • Salt and Pepper to taste

Dressing

  • 1/4 Cup Salsa
  • 1/4 Cup Greek yogurt

Directions

  1. Over medium heat, brown, the turkey in a large skillet breaking it into smaller pieces as it cooks, about 5 minutes.
  2. Add salt, dry seasoning, and mix well.
  3. Add onion, pepper, tomato sauce, salsa, water, and cover.
  4. Simmer on low for 15 min.
  5. Remove cover and add riced veggie medley, salt, and pepper, mix well until cooked for about 2-3 minutes. *Do not overcook the riced veggie medley.
  6. For dressing: In a bowl add Salsa and Greek yogurt, mix well.
  7. In a large bowl, massage Kale Super Blend with a little salt and olive oil.
  8. Add Turkey mixture, black beans, sliced black olives, mozzarella cheese, and dressing and ready to serve.
