  1. In a saucepan, add an inch of water, riced cauliflower with the lid, steam for 10 minutes, until softened; remove from heat.
  2. In a large pot, add butter, steamed cauliflower rice, shredded cheese and salt. Mix until mashed and smooth.
  3. Serve while hot and top with shredded cheese and chives.
