Ingredients

  • 1 Package Harvest Fresh Spinach
  • 1 Package Pie Crusts, Pillsbury (2pk)
  • ½ Onion, chopped
  • 2 Garlic, cloves minced
  • 1 Jar Roasted Peppers, sliced, divided
  • 12 Slices Mortadella, divided
  • 12 Slices Provolone Cheese, divided
  • 12 Slices Ham, divided
  • 12 Slices Sweet Salami, divided
  • 5 Eggs
  • 1 Cup Parmesan Cheese
  • 1 Cup Mozzarella Cheese, shredded
  • 1 Tsp. Garlic Plus Seasoning
  • 1 Tsp. Italian Seasoning
  • 2 Tbsp. Olive Oil
  • Egg + 1 Tsp water, egg wash

Directions

  1. Preheat oven at 350 degrees. Lightly spray baking pan (removeable sides) with cooking spray.
  2. In a skillet, on medium to high heat, add oil, add onions, sauté until translucent, add garlic sauté until fragrant, add spinach sauté until wilted.
  3. In a bowl, add eggs, parmesan cheese, whisk until combined.
  4. For Assembly: Add 1 pie crust as a base, add spinach mixture, mortadella, provolone cheese, Salami, provolone cheese, ham, ½ egg mixture, roasted peppers, and repeat for 2nd layer, then add Italian seasoning, and top with mozzarella cheese, top with 2nd pie crust, to seal and brush with egg wash.
  5. Place in oven, and bake for 30 minutes, until golden brown. Remove from heat and ready to serve.
