In a bowl, add spinach and shredded mozzarella cheese. Mix until full combined. Set aside.
In a large bowl, add cooked rice, eggs, and garlic powder, salt, and pepper to taste. Mix until fully combined.
For assembly: Take a spoon full of rice, form into a ball, place an opening in the centre, add spinach filling and re-form into a ball, until spinach filling is covered. Repeat for each.
Place in air fryer, spray avocado cooking spray on each rice ball, air fry at 375 degrees for 25 minutes, until golden brown and crispy. Remove from heat and ready to serve with tomato sauce.
