Ingredients

  • 1 Package Harvest Fresh Spinach
  • 1 Cup Shredded Mozzarella
  • 3 Garlic Cloves, minced.
  • 1 Tbsp. Oil
  • ½ Tsp Salt

Rice Ball 

  • 3 Cups Arborio Rice
  • 10 Cups Water
  • 1 ½ Cup Parmesan Cheese
  • 1 Tsp. Garlic powder
  • 2 eggs beaten
  • Salt and pepper to taste

What You Need

Directions

  1. In a pot, add water, bring to boil add rice, cook according to packaging directions, strain, until completely dried and moisture is reduced.
  2. In a Skillet, on medium heat, add oil, once hot add garlic, sauté until fragrant, add Spinach, sauté until wilted, add salt, sauté until moisture is reduced. Slightly cool.
  3. In a bowl, add spinach and shredded mozzarella cheese. Mix until full combined. Set aside.
  4. In a large bowl, add cooked rice, eggs, and garlic powder, salt, and pepper to taste. Mix until fully combined.
  5. For assembly: Take a spoon full of rice, form into a ball, place an opening in the centre, add spinach filling and re-form into a ball, until spinach filling is covered. Repeat for each.
  6. Place in air fryer, spray avocado cooking spray on each rice ball, air fry at 375 degrees for 25 minutes, until golden brown and crispy. Remove from heat and ready to serve with tomato sauce.
