Add leeks, garlic, mushrooms, cubed vegetable medley, roasted peppers, mix until fully combined. Season with paprika, salt and pepper.
Add Vegetable broth, mix until fully combined. Cover with lid on medium heat, cook until vegetable medley has softened. Add Gruyere cheese, cook until cheese is melted.
Remove from heat, place in a bowl, garnish with cilantro and ready to serve.
