Simmer for 30 minutes, add cooked pasta, pasta water, and spinach, salt and pepper, simmer for 5 minutes, until spinach is wilted, then add parmesan cheese. Mix until combined.
Remove from heat, top with shredded parmesan, parsley and ready to serve.
