Ingredients

  • 1 Package Cubed Vegetable Medley
  • ¼ Cup Salted Butter
  • 1 ½ Tbsp Honey
  • ¾ Tsp Salt
  • ¼ Tsp. Chili Powder
  • 1 Tsp. Garlic Powder
  • 1 Tsp. Paprika
  • ½ Cup Vegetable Broth

Ricotta Base

  • 1 Cup Ricotta
  • Lime, Juice
  • ½ Tbsp. Lime Zest
  • 2 Tbsp. Chopped Fresh Parsley

½ Tsp. Salt

 Topping:

  • Chopped Fresh Parsley
  • Chopped Pistachios
  • Honey

Directions

  1. Pre-heat oven at 375 degrees.
  2. Heat a large sauté pan over medium heat, add butter, until melted, add honey and salt, mix until all combined, and it becomes foamy, add seasoning and vegetable medley and toss, sauté for 10 minutes, until caramelized.
  3. Add broth on medium to high heat, sauté for 10 minutes, until liquid is evaporated.
  4. Remove from heat and bake for 20 minutes, until soft and golden brown.
  5. Ricotta base: In a bowl, mix all ingredients, mix until all combined.
  6. For Assembly: In a dish, place ricotta base and vegetable medley on top, garnish with honey, parsley, pistachios, and ready to serve.

