Ingredients
- 1 Cup Harvest Fresh Spinach
- 1 Package Tortellini, meat
- 8 Cups. Chicken Broth
- 5 Tbsp. Parmesan Cheese
- 2 Eggs
- Pepper to Taste
Directions
- In a Large pot, on high heat, bring broth to a light boil. Add Parmesan cheese, let simmer for 5 minutes
- Add Tortellini, cook as directed on package, or until cooked, then add spinach and cook, until slightly wilted.
- In a small bowl, whisk eggs, and pepper.
- Bring to a boil and slowly pour egg mixture in broth and whisking at the same time. Remove from stove and ready to serve.
