Ingredients

  • 1 Cup Harvest Fresh Spinach
  • 1 Package Tortellini, meat
  • 8 Cups. Chicken Broth
  • 5 Tbsp. Parmesan Cheese
  • 2 Eggs
  • Pepper to Taste

What You Need

Directions

  1. In a Large pot, on high heat, bring broth to a light boil. Add Parmesan cheese, let simmer for 5 minutes
  2. Add Tortellini, cook as directed on package, or until cooked, then add spinach and cook, until slightly wilted.
  3. In a small bowl, whisk eggs, and pepper.
  4. Bring to a boil and slowly pour egg mixture in broth and whisking at the same time. Remove from stove and ready to serve.
