Ingredients
- 2 Cups Harvest Fresh Spinach
- 1 Cup Goat Cheese
- ½ Cup Cream Cheese
- ½ Cup Parmesan Cheese, grated
- 1/3 Cup, Julienne Cut Sun-dried Tomatoes, (packed in oil) drained
- ¼ Cup Black Olives, Sliced
- 2 Tbsp. Oil
- 1 Tbsp. Butter
- 2 Garlic cloves, finely chopped
- Basil, topping
- ½ Tsp. Black pepper
Directions
- In a large pan, on medium to high heat add butter, once melted, add garlic, then sauté for 1 minute, then add Spinach, cook until all the moisture is then reduced.
- In a large bowl combine goat cheese, cream cheese, parmesan cheese, olive oil and black pepper. Using a hand mixer, blend well. Add sautéed spinach, mix well with a spatula, until all combined.
- In a small baking dish, lightly spray cooking spray, add spinach cheese mixture, and spread evenly. Bake at 400 degrees for 20 minutes until golden brown.
- Remove from heat add sun-dried tomatoes, black olives, and garnish with Basil. Serve while hot with crackers or a toasted baguette, as desired.
