Ingredients
- 1 Package Harvest Fresh Kale Super Blend
- 1 Package Harvest Fresh Cubed Vegetable Medley
- 1 Package Harvest Fresh Cubed Beets
- Brussel sprouts, cut in halves
- 5 Tbsp. Butter, melted, + 1 Tbsp for sauté
- 4 Garlic Cloves, minced
- 3 Tbsp Honey + 1 Tbsp drizzle
- 1 Tbsp. Dried Rosemary
- Salt and Pepper to taste
- Feta cheese
- Pistachios
Directions
- Pre-heat oven at 375 degrees
- In a small bowl add melted butter, garlic, honey, dried rosemary, salt, and pepper, mix until all combined.
- In a large bowl, add cubed vegetable medley, Beets, Brussel sprouts, pour butter mixture on top, until fully combined.
- In oven tray, add vegetables, and spread evenly on the pan. Place, in oven, for 35 minutes, until vegetables have softened
- In a Skillet, add 1 Tbsp butter, add Kale Super Blend, sauté for 3 minutes, add roasted vegetables, remove from heat, and add feta and pistachios, drizzle with honey and ready to serve.
