In a small bowl add melted butter, garlic, honey, dried rosemary, salt, and pepper, mix until all combined.
In a large bowl, add cubed vegetable medley, Beets, Brussel sprouts, pour butter mixture on top, until fully combined.
In oven tray, add vegetables, and spread evenly on the pan. Place, in oven, for 35 minutes, until vegetables have softened
In a Skillet, add 1 Tbsp butter, add Kale Super Blend, sauté for 3 minutes, add roasted vegetables, remove from heat, and add feta and pistachios, drizzle with honey and ready to serve.
