Ingredients

  • 1 Package Harvest Fresh Spinach
  • 2 Large Tortilla Wrap
  • ½ Pint Cherry Tomatoes, halved
  • ½ Red Onion, sliced Rings into (4)
  • 1 Red Pepper, sliced
  • 2 Garlic Cloves, minced
  • 4 Eggs, whole
  • 1 Can Salmon, drained
  • 1 ½ Cups Mozzarella Cheese, divided
  • 1 Tbsp. Olive Oil, and drizzle
  • Salt and Pepper to taste

Directions

  1. Pre-heat oven at 350 degrees.
  2. In a frying pan, on medium heat, add oil, once hot reduce heat, add garlic, peppers, sauté for 3 minutes, add spinach, sauté until wilted. Set aside.
  3. For Assembly: In a baking pan (removable sides), add Tortilla wrap, ½ shredded mozzarella cheese, top with another tortilla wrap, add cherry tomatoes, sauteed vegetables, salmon, onions, place whole eggs in each onion ring, drizzle oil, salt and pepper and top with remaining shredded mozzarella cheese.
  4. Place in oven for 25 minutes, until cheese is melted, and eggs are cooked. Remove from heat, slice and ready to serve.

