  1. Heat soup pot to medium, and melt butter
  2. Saute the Leeks in the butter for 5 minutes
  3. Add the stock and sweet potato, and bring to a boil.
  4. Simmer for 15 minutes, until the sweet potato is soft and cooked.
  5. Season the mix with Black Pepper to taste and cool.
  6. Place the mix in a food processor and blend until smooth.
  7. Return to pot, and heat until the desired temperature is reached. If necessary, use a little water to thin to desired consistency (add slowly!)
  8. (Optional) Grill the bacon until crispy, chop into bite-size pieces, and use for garnish!
  9. Garnish with chives, and serve
