Ingredients
- Harvest Fresh Cubed Sweet Potato (400g)
- Leeks (shredded)
- 25g Butter
- Chicken or Vegetable Stock, 400ml
- Ground Black Pepper
- 4 thick slices of Bacon (optional)
- Chives for Garnish
Directions
- Heat soup pot to medium, and melt butter
- Saute the Leeks in the butter for 5 minutes
- Add the stock and sweet potato, and bring to a boil.
- Simmer for 15 minutes, until the sweet potato is soft and cooked.
- Season the mix with Black Pepper to taste and cool.
- Place the mix in a food processor and blend until smooth.
- Return to pot, and heat until the desired temperature is reached. If necessary, use a little water to thin to desired consistency (add slowly!)
- (Optional) Grill the bacon until crispy, chop into bite-size pieces, and use for garnish!
- Garnish with chives, and serve
