Pre- heat oven to 400 degrees. On a baking pan, add parchment paper, then add cubed sweet potato and place in oven for 30 minutes, until tender and cooked.
In a bowl, add cooked sweet potato, using a fork mash sweet potato, until smooth, then add cooked ground beef, black beans, shredded cheese, salsa, seasonings, salt and pepper, mix until fully combined.
Place tortilla filling on half and top with more cheese fold over into half-moon. Repeat the process for each and place on a skillet to crisp until slightly golden brown on each side. Remove from heat and ready to serve with an avocado spread.
