Ingredients

  • 4 Tortilla Wraps
  • Avocado, spread
  • Shredded cheese, topping

Taco Filling

  • 2 Package Harvest Fresh Cubed Sweet Potatoes
  • 1 Tbsp. Oil
  • 1 Tsp Salt
  • ¼ Tsp. Pepper
  • 1 Lb. Ground beef, cooked
  • 1 Can Black Beans, rinsed
  • ½ Cup Shredded Cheese
  • ¼ Cup Salsa
  • 1 Tbsp. Taco Seasoning
  • 2 Tsp. Garlic powder
  • 1 Tsp. Paprika
  • 1 Tsp. Salt
  • ¼ Tsp. Pepper
  • Avocado spread, topping

Directions

  1. In bowl, add cubed sweet potato, oil, salt and pepper, mix until all combined.
  2. Pre- heat oven to 400 degrees. On a baking pan, add parchment paper, then add cubed sweet potato and place in oven for 30 minutes, until tender and cooked.
  3. In a bowl, add cooked sweet potato, using a fork mash sweet potato, until smooth, then add cooked ground beef, black beans, shredded cheese, salsa, seasonings, salt and pepper, mix until fully combined.
  4. Place taco filling on half of tortilla and top with more cheese fold over into half-moon. Repeat the process for each and place on a skillet to crisp until slightly golden brown on each side. Remove from heat and ready to serve with an avocado spread.

